The German Bakery is a true from scratch bakery in the heart of Waihi, New Zealand.
We specialise in traditional artisan German baking with a strong focus on sourdough breads and organic ingredients. Wheat-free and gluten-free breads and cakes are part of our daily selection and committed to delivering a healthy product we stay away from preservatives, artificial rising agents, enzymes, stabilizers and processing aids.
We believe that bread which has been carefully prepared by hand using high-quality ingredients and which has been fermented over a minimum of 12 hours by a natural sourdough starter is the Staff of Life. Still.

Ronny, who is in charge of the kitchen at The German Bakery, says he uses the most precious ingredient available in his breads: time. And lots of it!
We don’t use ready-made doughs or premixes. We bake without stabilizers, preservatives, colours, artificial flavours, enzymes or processing aids. We use real ingredients and labour intense processes to flavour our food. Our aim is to support local producers where we can and we source produce that is as raw, untreated and unprocessed as possible. We are honest and transparent about what goes into our food so that our customers can make an informed choice.
Our breads are made from flour, filtered water, NZ seasalt, soaked seeds (if applicable) and lots of time - that's all.

Wednesday to Friday: 9am - 3pm
Saturday: 9am - 1pm
Sunday, Monday, Tuesday: CLOSED
Find us at The Hamilton Farmers Market on Sunday: 8am - 12pm
NOTE: From May 2019 onwards we will be shut for the winter.
We plan to reopen Labour Weekend (October) 2019.
